Had a funny exchange with my sister last week. I asked her to come for dinner and tempted her with a text that included “I’m making Mexican from scratch today – even the tortillas.”
She replied that she’s been enjoying the challenge of vegan cooking lately. To which my reply was “Vegan? Oh shit! I’m making carnitas… The most delicious pork dish evar!!!”.
Yep. I’m sensitive like that. I made the pork, but also a number of other delicious bits and bobs including Austin-style black beans from the Homesick Texan. All’s well that ends well right?
I was however, inspired by her and while I can’t commit to a vegetarian, let alone vegan life, we do try to eat meat-free three nights a week here.
This year, rather than “trying”, I am purposefully adding vegetarian meals to the fortnightly meal plan. And because I can’t resist a good hashtag, I’ve made a commitment to make it at least every Monday.
This weeks #meatfreemonday consisted of :: roast veg (eggplant, capsicum, parsnip, onion), charmoula yoghurt, homemade hummus, Greek-style salad, flat bread and goats cheese. A bit of a mish-mash but tasty nonetheless.
